Slow-Roast the Pork

Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Place in a roasting pan and cover with foil. Roast for 6-8 hours until the pork is tender and easily pulled apart.

Prepare Pickled Carrots and Jalapenos

In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, then remove from heat. Pour over sliced carrots and jalapenos in a jar. Let cool to room temperature and refrigerate for at least 1 hour.

Make the Aioli

In a bowl, mix mayonnaise, minced garlic, lemon juice, and salt to taste. Stir until well combined.

Assemble the Cambogiano

Slice the telera rolls and spread a generous amount of aioli on both halves. Layer with pulled pork, pickled carrots, jalapenos, sliced cucumber, and fresh cilantro. Close the sandwich and serve.
