Special rustic lentil soup with potato and wild boar sausages

Rinse the lentils under cold water and set aside. Peel and dice the potatoes, carrot, celery, onion, and garlic.

Prepare the Ingredients

In a large pot, heat olive oil over medium heat. Add the wild boar sausages and cook until browned, about 5-7 minutes. Remove the sausages and slice them into bite-sized pieces. Set aside.

Cook the Sausages

In the same pot, add the onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the garlic and cook for an additional minute.

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-35 minutes, or until the lentils and potatoes are tender.

Simmer the Soup

In the last 10 minutes of cooking, add the sliced sausages back into the pot. Stir to combine and heat through.

Add the Sausages
