    Prepare the Veal

    Season the veal shanks with salt and black pepper on both sides.

    Brown the Veal

    In a large, heavy pot, heat the olive oil over medium-high heat. Add the veal shanks and brown them on all sides. Remove the shanks from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the diced carrot, celery, and onion. Sauté for about 5 minutes, or until the vegetables are softened. Add the minced garlic and cook for an additional 1-2 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 1 minute. Then, pour in the dry white wine, scraping the bottom of the pot to deglaze it.

    Simmer

    Return the veal shanks to the pot. Add the beef broth, bay leaves, and thyme. Bring to a simmer, cover, and reduce the heat to low. Cook for about 1.5 to 2 hours, or until the meat is tender.

    Serve

    Once cooked, remove the bay leaves. Serve the ossobuco over pasta or with vegetables and potatoes. Top with gremolata before serving.
