Prepare the Oysters
Preheat the broiler. Clean the oysters thoroughly under cold running water. Open the oysters and place them on a baking sheet, keeping them in their shells.

Make the Mornay Sauce
In the same skillet, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the milk, continuing to stir until the sauce thickens. Remove from heat and stir in the grated cheddar cheese until melted. Add in the chopped spinach, sambuca, salt, and pepper. Mix well.

Assemble the Dish
Spoon the Mornay sauce over each oyster, then sprinkle the crispy pancetta on top. Dust with paprika.

Broil the Oysters
Place the baking sheet under the broiler for about 5-7 minutes, or until the tops are golden and bubbly. Watch closely to prevent burning.
