Prepare the Grouper
Season the grouper fillets with salt and black pepper on both sides.

Sauté the Fillets
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned grouper fillets and sauté for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.

Make the Sauce
In the same skillet, add the remaining olive oil and garlic. Sauté for about 1 minute until fragrant. Add the heirloom grape tomatoes, black olives, capers, and white wine. Bring to a simmer and cook for about 5-7 minutes until the sauce slightly thickens.

Combine and Serve
Return the grouper fillets to the skillet, spooning the sauce over them. Cook for an additional 2 minutes to warm through. Garnish with fresh parsley before serving.
