In a bowl, mix together mayonnaise and horseradish until well combined. Season with salt and black pepper to taste. Set aside.

Cook the Filet Mignon

Heat olive oil in a skillet over medium-high heat. Season the filet mignon with salt and black pepper. Sear each side for about 3-4 minutes for medium-rare or until desired doneness. Remove from heat and let rest.

Prepare the Stuffed Peppers

Cut the bell peppers in half and remove the seeds. Lightly brush with olive oil and season with salt. Roast in a preheated oven at 400°F (200°C) for about 15 minutes until slightly tender.

Slice the cooked filet mignon and place it inside the roasted bell pepper halves. Top with fresh arugula and a generous spread of horseradish aioli. Place the stuffed peppers on the buns and serve.
