Prepare the Chicken

Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.

Bread the Chicken

Set up a breading station with three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan. Dredge each chicken breast in flour, dip into the egg, and finally coat with breadcrumbs.

Cook the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken and cook for 3-4 minutes on each side or until golden brown and cooked through. Remove and let drain on paper towels.

Make the Lemon-Caper Sauce

In a small bowl, mix lemon juice, capers, and minced garlic. Stir to combine.

Prepare the Arugula Salad

In a large bowl, toss arugula and cherry tomatoes with a drizzle of olive oil, salt, and pepper.

Place the chicken on plates, top with lemon-caper sauce, and serve alongside the arugula salad.
