1. Prepare the Filling
In a mixing bowl, combine the braised short ribs and shredded mozzarella cheese. Mix well and set aside.
2. Form the Arancini
Take a handful of cooled risotto and flatten it in your palm. Place a spoonful of the short rib and mozzarella mixture in the center, then mold the risotto around it to form a ball. Repeat until all the ingredients are used.
3. Coat the Arancini
Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl. Roll each arancini ball in flour, dip in the egg, and finally coat with breadcrumbs.
4. Fry the Arancini
In a large pot, heat oil to 350°F (175°C). Fry the arancini in batches until golden brown, about 3-4 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
