Prepare the Broth
In a saucepan, bring the vegetable broth to a simmer and keep it warm over low heat.

Sauté the Aromatics
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

Toast the Rice
Add the Arborio rice to the skillet and stir to coat the grains in the oil. Toast the rice for about 2 minutes until slightly translucent.

Deglaze with Wine
Pour in the white wine and cook, stirring constantly, until it has mostly evaporated.

Add the Broth Gradually
Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more. Continue this process for about 18-20 minutes.

Incorporate Vegetables
When the rice is creamy and al dente, stir in the seasonal vegetables. Cook for an additional 5 minutes until the vegetables are tender.

Finish with Cheese and Seasoning
Remove the skillet from heat and stir in the grated Parmesan cheese, chopped parsley, salt, and black pepper. Adjust seasoning to taste.
