Directions for Making Risotto Bites

    Prepare the Risotto

    In a large saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.

    Cook the Rice

    Add arborio rice to the saucepan and stir for 2-3 minutes until lightly toasted. Gradually add chicken broth, one cup at a time, stirring constantly until absorbed before adding more. Cook until rice is al dente, about 18-20 minutes.

    Add Sausage and Peppers

    In a separate skillet, cook Italian sausage over medium heat until browned. Add diced banana peppers and cook for another 2-3 minutes. Combine this mixture with the risotto.

    Finish the Risotto

    Stir in grated Romano cheese, salt, and pepper. Remove from heat and let cool slightly.

    Form the Bites

    Once cool enough to handle, scoop out portions of the risotto mixture and form them into bite-sized balls. Dip each ball in beaten egg, then roll in bread crumbs to coat.

    Fry the Bites

    Heat oil in a frying pan over medium-high heat. Fry the risotto bites until golden brown on all sides, about 3-4 minutes. Drain on paper towels.
