    Prepare the Broth

    In a saucepan, heat the chicken broth over medium heat until it is simmering. Keep it warm on low heat.

    Sauté Onion and Garlic

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Toast the Rice

    Add the Arborio rice to the skillet, stirring to coat the grains with the oil and butter. Cook for about 2 minutes until the rice is slightly translucent.

    Add Broth Gradually

    Pour in a ladleful of the warm chicken broth and stir until it is mostly absorbed by the rice. Continue adding the broth, one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. This process should take about 18-20 minutes.

    Incorporate Cheese and Seasoning

    Once the rice is creamy and al dente, remove the skillet from heat. Stir in the remaining tablespoon of butter, grated Parmesan cheese, salt, and black pepper to taste. Mix until the cheese is melted and well combined.

    Serve the risotto hot, garnished with chopped parsley and additional Parmesan cheese if desired.
