French Fries with Truffle Oil

Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add the dried potato strips in batches to the hot oil. Fry them for about 4-5 minutes or until they are golden brown and crispy. Remove the fries with a slotted spoon and let them drain on paper towels.

Season the Fries
While the fries are still hot, drizzle them with truffle oil, then sprinkle with salt, black pepper, and chopped parsley. Toss gently to coat evenly.
