Chips Preparation

    Prepare the Potatoes

    Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and soak for about 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
