1. Prepare the Calamari
In a mixing bowl, combine the flour, cornstarch, salt, and black pepper. In another bowl, whisk together the egg and buttermilk. Dip the calamari rings into the buttermilk mixture, then dredge them in the flour mixture until fully coated.
2. Fry the Calamari
In a large pot or deep fryer, heat the olive oil to 350°F (175°C). Fry the calamari in batches for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
3. Toss with Buffalo Sauce
In a large mixing bowl, combine the fried calamari, banana peppers, and cherry tomatoes. Drizzle with Buffalo sauce and toss until evenly coated.
4. Serve
Plate the Buffalo calamari, top with crumbled bleu cheese, and drizzle with balsamic reduction before serving.
