Method

Prepare the Cod

    Bread the Cod

    Preheat your oven to 400°F (200°C). Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs. Dredge each cod fillet in the flour, then dip in the eggs, and finally coat with breadcrumbs. Place the breaded fillets on a baking sheet.

    Cook the Cod

    Drizzle olive oil over the breaded cod fillets. Bake in the preheated oven for 15-20 minutes or until the cod is cooked through and golden brown.

Prepare the Pommes Frites

    Cut and Fry the Potatoes

    Cut the potatoes into thin strips. Heat the olive oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and sprinkle with salt.

Prepare the Arugula Salad

    In a large bowl, combine the arugula, halved cherry tomatoes, lemon juice, olive oil, salt, and pepper. Toss until the salad is well mixed.

Make the Preserved Lemon Aioli

    Combine Ingredients

    In a small bowl, mix together mayonnaise, chopped preserved lemon, minced garlic, and lemon juice until smooth. Adjust seasoning if necessary.
