Add the minced garlic and stir for 1 minute until fragrant.

Add the ground pork and ground beef to the pan. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

Stir in the crushed tomatoes, fresh thyme, salt, and black pepper. Simmer the ragu for at least 30 minutes, stirring occasionally.

Cook the Paccheri
Bring a large pot of salted water to a boil. Add the paccheri and cook according to package instructions until al dente. Drain and reserve some pasta water.

Combine and Serve
Add the cooked paccheri to the ragu, tossing to combine. If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.

Stir in the chopped parsley and serve with grated Parmigiano-Reggiano on top.
