    Prepare Ingredients

    Dice the guanciale and applewood bacon into small pieces. Grate the Pecorino Romano cheese and set aside.

    Cook Pasta

    In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the pasta.

    Cook Guanciale and Bacon

    In a large skillet over medium heat, add the diced guanciale and applewood bacon. Cook until crispy and the fat has rendered, about 5-7 minutes. Remove from heat.

    Mix Egg and Cheese

    In a bowl, whisk together the eggs, grated Pecorino Romano, and a generous amount of black pepper until well combined.

    Combine Pasta and Sauce

    Add the hot spaghetti to the skillet with the guanciale and bacon. Toss to combine, then immediately pour in the egg and cheese mixture. Stir quickly to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

    Serve immediately with extra Pecorino Romano and black pepper on top.
