Prepare the Pork
Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub salt into the scores.

Stuff the Pork
Spread the herb mixture evenly over the pork loin and place it on top of the pork belly. Roll the pork belly around the loin and tie it tightly with kitchen twine.

Roast the Porchetta
Preheat the oven to 220°C (428°F). Place the rolled porchetta in a roasting pan. Drizzle with olive oil and pour white wine around it. Roast for 30 minutes.

Reduce the oven temperature to 160°C (320°F) and roast for an additional 2 hours, or until the internal temperature reaches 70°C (160°F).
