    Activate Yeast

    In a small bowl, combine the warm water, brown sugar, and yeast. Let it sit for about 5 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour.

    Shape the Pretzel Bites

    Preheat your oven to 450°F (232°C). Punch down the dough and cut into small pieces (about 1 oz each). Roll each piece into a small rope and twist into a pretzel shape or keep them as bites.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil the pretzel bites in batches for 30 seconds each.

    Bake

    Place the boiled pretzel bites on a baking sheet lined with parchment paper. Brush with the beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
