Prepare the batter
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold beer (or sparkling water) and mix until smooth.

Prepare the fish
Pat the Atlantic cod fillets dry with paper towels. Dip each fillet into the batter, allowing excess to drip off.

Heat the oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the fish
Carefully place the battered fish fillets into the hot oil and fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Prepare the fries
While the fish is frying, peel and cut the potatoes into thin strips. Rinse them in cold water and pat dry. Fry the potato strips in the same oil until golden and crispy, about 4-6 minutes. Drain on paper towels and season with salt.

Make the tartar sauce
In a bowl, combine mayonnaise, finely chopped dill pickles, lemon juice, salt, and pepper to taste. Mix well and set aside.

Prepare the coleslaw
In a large bowl, combine shredded cabbage, shredded carrots, vinegar, sugar, and salt. Toss well to combine and let sit for at least 10 minutes before serving.

Serve the hot fish with crispy fries, tartar sauce, and coleslaw on the side.
