Salad Preparation

Cook Quinoa
Rinse the red quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Prepare Vinaigrette
Finely chop the shallot and whisk together with white balsamic vinegar, olive oil, salt, and pepper in a small bowl. Adjust seasoning to taste.

Assemble Salad
In a large bowl, add the baby kale, cooked quinoa, chopped Granny Smith apples (diced), and walnuts. Crumble goat cheese on top.

Dress the Salad
Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.
