    Cook the Pork

    In a large pot, heat olive oil over medium heat. Add the pork shoulder, season with salt and black pepper, and sear on all sides until browned. Cover and cook on low heat for about 2 hours or until the pork is tender and easily shredded.

    Prepare the Macaroni

    Meanwhile, cook the macaroni pasta according to package instructions. Drain and set aside.

    Cook the Bacon

    In a skillet, cook the bacon strips until crispy. Remove from the skillet, drain on paper towels, and crumble.

    Combine Ingredients

    Once the pork is cooked, shred it using two forks. In a large bowl, mix the shredded pork with BBQ sauce, cooked macaroni, and half of the shredded cheddar cheese. Stir to combine.

    Bake the Dish

    Preheat the oven to 180°C (350°F). Transfer the mixture into a greased baking dish. Top with remaining cheddar cheese, crumbled bacon, and crispy fried onions.

    Bake in the oven for 25-30 minutes or until the cheese is melted and bubbly. Remove from oven and let it cool slightly before serving.
