    Prepare the Chicken

    Season the chicken breasts with blackening seasoning, salt, and black pepper. Let it marinate for about 10 minutes.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the bacon grease in the pan.

    Sauté the Onion

    In the same skillet, add chopped onion to the bacon grease and sauté until translucent, about 5-7 minutes.

    Cook the Chicken

    Add olive oil to the skillet and increase heat to medium-high. Once hot, add the marinated chicken breasts and cook for about 5-7 minutes on each side until fully cooked.

    Make the Jameson Sauce

    Remove the chicken from the skillet and set aside. Pour in the Jameson whiskey and let it reduce for a minute. Then add the heavy cream and stir until combined. Let it simmer for a few minutes.

    Combine and Serve

    Crumble the cooked bacon and bleu cheese over the chicken. Pour the Jameson sauce over the top and serve immediately.
