1. Prepare the Beef
In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef chunks with salt and pepper, then sear them in batches until browned on all sides. Remove and set aside.
2. Sauté Vegetables
In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent. Add diced carrots and potatoes, cooking for about 5 minutes.
3. Add Liquids and Seasoning
Stir in the tomato paste, then add the Guinness stout and beef broth. Bring to a simmer, scraping the bottom of the pot to deglaze.
4. Combine and Simmer
Return the beef to the pot, add bay leaves and thyme. Bring the stew to a boil, then reduce heat to low and cover. Let it simmer for about 1.5 to 2 hours, or until the beef is tender.
5. Serve with Mashed Potatoes
Adjust seasoning with salt and pepper as needed. Serve hot over a bed of mashed potatoes.
