Prepare the Tartar Sauce
In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Mix well and set aside in the refrigerator.

Make the Beer Batter
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, stirring until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 375°F (190°C).

Fry the Cod
Dip each cod fillet into the beer batter, ensuring it is fully coated. Carefully place the battered cod into the hot oil, frying in batches if necessary, for about 4-5 minutes or until golden brown and crispy.

Assemble the Sandwich
Remove the fried cod from the oil and let it drain on paper towels. Toast the brioche buns lightly. Place a piece of fried cod on each bun, add a generous amount of tartar sauce, and top with the other half of the bun.
