Main Ingredients

Seasonal Vegetables

Method

Preparation of Salmon

  1. 1

In a small bowl, mix together olive oil, lemon juice, minced garlic, salt, and black pepper to create the marinade.

  2. 2

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well-coated. Cover and refrigerate for at least 30 minutes.

Grilling the Salmon

  1. 3

Preheat your grill to medium-high heat.

  2. 4

Remove the salmon fillets from the marinade and allow excess marinade to drip off.

  3. 5

Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes on one side, then carefully flip and cook for another 4-6 minutes or until the salmon flakes easily with a fork.

Preparation of Vegetables

  1. 6

While the salmon is marinating, prepare the seasonal vegetables. Toss the asparagus, cherry tomatoes, and sliced zucchini with olive oil and salt in a bowl.

  2. 7

Grill the vegetables alongside the salmon, turning occasionally, until they are tender and slightly charred, about 5-7 minutes.

Serving

  1. 8

Once the salmon and vegetables are done grilling, remove them from the grill.

  2. 9

Serve the grilled salmon fillets on plates with the grilled seasonal vegetables arranged on the side.

  3. 10

Optionally, drizzle with additional lemon juice or a sprinkle of fresh herbs before serving.
