Crust Preparation

Make the Tart Crust
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the unsalted butter, and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Stir in the egg yolk and ice water until the dough comes together. If the dough is too crumbly, add more ice water, one tablespoon at a time.

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Cream Filling
In a medium bowl, beat the cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix until well combined.
