Crust Preparation

  1. 1

    Make the Tart Crust

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the unsalted butter, and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

  2. 2

    Combine Ingredients

Stir in the egg yolk and ice water until the dough comes together. If the dough is too crumbly, add more ice water, one tablespoon at a time.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll and Bake

Preheat your oven to 350°F (175°C). On a floured surface, roll out the chilled dough to fit your tart pan. Press the dough into the pan, prick the bottom with a fork, and bake for 20-25 minutes or until golden brown. Allow to cool completely.

Filling Preparation

  1. 5

    Prepare the Cream Filling

In a medium bowl, beat the cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix until well combined.

  2. 6

    Whip the Heavy Cream

In a separate bowl, whip the heavy cream until stiff peaks form.

  3. 7

    Combine the Fillings

Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

  4. 8

    Fill the Tart Shell

Spread the filling evenly over the cooled tart crust, smoothing the top with a spatula.

Topping Preparation

  1. 9

    Prepare the Fruits

Wash and slice the assorted fresh fruits as desired. Arrange them artistically over the cream filling.

  2. 10

    Prepare the Glaze

In a small saucepan, combine apricot jam and water. Heat over low heat until melted and smooth.

  3. 11

    Glaze the Fruits

Using a pastry brush, gently glaze the fruits with the apricot mixture to give them a shiny finish.

  4. 12

    Chill and Serve

Refrigerate the tart for at least 1 hour before serving to allow the filling to set. Slice and enjoy your delicious fruit tart!
