Spanakopita-spinach Cheese Pie Recipe

A mixture of fresh spinach, green onions, Feta cheese, eggs, dill and other seasonings. Layered between lightly buttered sheets of phyllo dough and baked to a golden brown. served with your choice of spinach rice or rice pilaf.

Preparation and Baking

    Prepare the Filling

    In a large bowl, combine the chopped spinach, green onions, crumbled feta cheese, beaten eggs, chopped dill, salt, and black pepper. Mix well until all ingredients are combined.

    Prepare the Phyllo Dough

    Preheat the oven to 375°F (190°C). Lay out the phyllo dough sheets and cover them with a damp cloth to prevent drying. Brush the bottom of a greased baking dish with olive oil.

    Layer the Phyllo

    Place one sheet of phyllo dough in the baking dish and brush lightly with olive oil. Repeat this process, layering 8 sheets of phyllo, brushing each layer with olive oil.

    Add the Filling

    Spread the spinach and cheese filling evenly over the layered phyllo dough.

    Top with Phyllo

    Layer the remaining phyllo sheets over the filling, brushing each sheet with olive oil. Fold over any excess phyllo from the sides to seal the filling.

    Bake

    Cut the spanakopita into squares or diamonds. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and crispy.

    Let cool for a few minutes before serving. Enjoy warm with your choice of spinach rice or rice pilaf.
