Prepare the Cheese
Cut the Kasseri cheese into thick slices, about 1/2 inch thick.
Coat the Cheese
Dredge each slice of cheese in flour, shaking off any excess, then dip into the egg mixture to coat fully.
Fry the Cheese
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded cheese slices and cook until golden brown on both sides, about 3-4 minutes per side.
Flambé
Once the cheese is golden brown, carefully pour the ouzo or brandy over the cheese and ignite it with a long lighter or match. Allow the flames to subside.
Serve
Serve immediately with lemon wedges on the side for squeezing over the hot cheese.
