    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until onion is translucent. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

    Mix the Filling

    In a bowl, combine the sautéed spinach mixture with feta cheese, beaten egg, salt, black pepper, and nutmeg. Mix well until all ingredients are incorporated.

    Prepare the Dough

    If using store-bought phyllo dough, thaw it according to package instructions. Lay one sheet of phyllo on a clean surface, brush lightly with olive oil, and place another sheet on top. Cut the phyllo into strips about 3 inches wide.

    Assemble Spanakopitakia

    Place a tablespoon of the spinach filling at the end of each phyllo strip. Fold the strip over the filling to form a triangle, then continue folding the triangle along the strip until you reach the end. Seal the edge with a little olive oil.

    Bake

    Place the filled triangles on a baking sheet lined with parchment paper. Brush the tops with olive oil. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.
