    Activate the Yeast

    In a small bowl, combine warm water (about 110°F), sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

    Shape the Pitas

    Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/4 inch thick.

    Second Rise

    Cover the discs with a damp cloth and let them rest for 30 minutes.

    Bake the Pitas

    Preheat your oven to 475°F (245°C). Place the discs on a baking sheet and bake for 5-7 minutes, or until they puff up and are lightly golden.

    Remove the pitas from the oven and let them cool slightly. Serve warm or at room temperature.
