    Sear the Lamb Shanks

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the lamb shanks with salt and black pepper. Sear the shanks on all sides until browned, about 4-5 minutes per side. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and cook until translucent. Add minced garlic and chopped carrots, cooking for an additional 5 minutes until the carrots start to soften.

    Add Tomatoes and Broth

    Stir in the crushed tomatoes, broth, and fresh rosemary. Bring the mixture to a simmer.

    Braise the Lamb

    Return the lamb shanks to the pot, cover, and reduce the heat to low. Let it simmer for about 2 to 2.5 hours, or until the meat is tender and falling off the bone.

    Serve

    Once cooked, remove the lamb shanks from the pot. Serve with the braising liquid and vegetables spooned over the top.
