    Prepare the Base

    In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrot, and diced celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Garlic and Spices

    Add minced garlic, bay leaf, salt, and black pepper to the pot. Stir for about 1 minute until fragrant.

    Add Broth and Beans

    Pour in the vegetable broth and add the white beans. Bring to a boil, then reduce the heat and let simmer for 10 minutes.

    Cook the Rice

    Add the long-grain rice and diced tomatoes to the pot. Cover and cook for another 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

    Finish and Serve

    Remove the bay leaf. Stir in crumbled feta cheese and adjust seasoning if necessary. Serve hot with warm pita bread on the side.
