    Prepare the Nut Mixture

    In a food processor, combine walnuts, sugar, and cinnamon. Pulse until finely chopped but not a paste. Set aside.

    Prepare the Phyllo

    Preheat the oven to 350°F (175°C). Melt the butter in a small saucepan. Lay out the phyllo dough, covering it with a damp kitchen towel to keep it moist.

    Assemble the Baklava

    Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo in the dish, brush with butter, and repeat for 5 sheets. Spread a layer of the nut mixture over the phyllo. Layer 2 more sheets of phyllo, brushing each with butter, then add more nut mixture. Repeat this process until all nuts are used, finishing with 5 layers of phyllo on top.

    Bake

    Cut the assembled baklava into diamond shapes with a sharp knife. Bake for 45-50 minutes or until golden brown.

    Prepare the Syrup

    While the baklava is baking, combine honey and water in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat.

    Finish the Baklava

    Once the baklava is done baking, pour the honey syrup evenly over the hot baklava. Allow it to cool completely before serving.
