    Prepare the Broth

    In a large pot, bring the homemade chicken broth to a gentle simmer over medium heat.

    Add Rice

    Stir in the cooked rice and allow it to heat through, about 5 minutes.

    Whisk Eggs and Lemon

    In a separate bowl, whisk together the eggs and fresh lemon juice until well combined and frothy.

    Temper the Egg Mixture

    Slowly ladle a few spoonfuls of the hot chicken broth into the egg and lemon mixture, whisking continuously to temper the eggs and prevent them from curdling.

    Combine and Heat

    Once tempered, slowly add the egg mixture back into the pot with the broth and rice, stirring constantly. Heat gently for about 3-5 minutes until the soup thickens slightly. Do not boil.

    Season the soup with salt and black pepper to taste.

    Ladle the Avgolemono into bowls and garnish with fresh parsley. Serve warm.
