Steak Preparation

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Heat the Skillet

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Steak

    Add the steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare, or adjust the time for your desired doneness.

    Add Flavorings

    In the last 2 minutes of cooking, add butter, crushed garlic, and thyme to the skillet. Baste the steaks with the melted butter using a spoon.

    Rest the Steak

    Transfer the steaks to a plate and let them rest for 5-10 minutes before slicing.

Frites Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin fries (about 1/4 inch thick). Rinse under cold water to remove excess starch.

    Soak the Potatoes

    Soak the cut fries in a bowl of cold water for at least 30 minutes to help make them crispy.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes (First Fry)

    Drain and pat the fries dry with a kitchen towel. Fry them in batches for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes until golden brown and crispy. Drain on paper towels and season with salt immediately.
