Preparing the Scallops

    Clean the Scallops

    Rinse the sea scallops under cold water and pat them dry with paper towels. Ensure they are free of any grit or sand.

    Season the Scallops

    Sprinkle the scallops with salt and black pepper on both sides, ensuring they are evenly coated.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until it’s hot but not smoking.

    Sear the Scallops

    Add the scallops to the skillet in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until a golden crust forms and they are opaque in the center. Remove from the skillet and set aside.

Making the Citrus Sauce

    Combine Sauce Ingredients

    In a small bowl, whisk together the fresh orange juice, fresh lemon juice, honey, minced garlic, salt, and black pepper until well combined.

    Pour the citrus sauce mixture into the same skillet used for the scallops. Bring to a simmer over medium heat, scraping the browned bits from the bottom of the pan for added flavor.

    Once the sauce has thickened slightly (about 3-5 minutes), remove from heat and stir in the chopped fresh parsley.
