Roasting Beets

Prepare the Beets
Preheat your oven to 400°F (200°C). Wash the beets thoroughly to remove any dirt. Trim the tops and roots, but leave the skins on.

Wrap and Roast
Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork.

Cool and Peel
Once roasted, remove the beets from the oven and let them cool for about 15 minutes. Once cool enough to handle, peel the skins off using your hands or a paper towel.

Mix the Dressing
In a small bowl, whisk together the sherry vinegar, olive oil, salt, and black pepper until well combined.
Make Whipped Feta

Blend Ingredients
In a food processor, combine the feta cheese, cream cheese, Greek yogurt, olive oil, and lemon juice. Blend until smooth and creamy.
Assemble the Dish

Slice and Serve
Slice the roasted beets into wedges and arrange them on a serving plate. Dollop the whipped feta on top, drizzle with the dressing, and sprinkle with chopped pistachios. Segment the orange and add on top for garnish. Serve immediately.
