Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Stir occasionally to prevent sticking.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving about 1/2 cup of the pasta water for later use.

Preparing the Vegetables

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Vegetables

    Add zucchini, bell pepper, broccoli, carrots, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until tender but still crisp.

    Incorporate Spinach

    Add the spinach leaves and cook for an additional 2-3 minutes until wilted.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Mix well to combine.

    Add Sauce Ingredients

    Pour in the lemon juice, and add Parmesan cheese, salt, and black pepper. If the mixture seems dry, add reserved pasta water a little at a time until you reach your desired consistency.

    Toss and Serve

    Toss everything together until well combined and heated through. Serve immediately with extra Parmesan cheese on top if desired.
