Croissant Dough Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F) and granulated sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

Knead Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Incorporate Butter
Roll out the dough into a rectangle. Place the cold unsalted butter in the center and fold the dough over to encase the butter. Roll out gently to create a larger rectangle.

Create Layers
Fold the dough into thirds like a letter, then roll out again. Repeat this process two more times for a total of three folds.

Final Rise
Wrap the dough in plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Mix Ingredients
In a mixing bowl, beat the unsalted butter until creamy. Add honey, orange zest, and lemon zest. Mix until well combined and fluffy.

Prepare Oranges
Wash the oranges thoroughly. Slice them thinly, removing seeds as you go.

Croissant Assembly and Baking

Shape Croissants
Roll out the chilled dough into a large rectangle, then cut into triangles. Roll each triangle from the base to the tip.

Place the rolled croissants on a baking sheet lined with parchment paper. Cover and let rise for 1 hour.

Preheat your oven to 400°F (200°C).

Brush the tops of the croissants with an egg wash (beaten egg) and bake for 15-20 minutes until golden brown.
