Salad Preparation

Prepare the Chicken
If not already cooked, grill or roast the chicken breasts until fully cooked, about 20-25 minutes. Let them cool, then dice into bite-sized pieces.

Prepare the Bacon
In a skillet over medium heat, cook the double smoked bacon until crispy, about 5-7 minutes. Drain on paper towels and chop into pieces.

Prepare the Tomatoes and Frisée
Wash the heirloom tomatoes and cut them into wedges. Rinse the frisée lettuce under cold water, then dry thoroughly.

Combine Salad Ingredients
In a large bowl, combine the diced chicken, chopped bacon, tomato wedges, and frisée. Gently toss to mix.

Make the Basil Mayo
In a food processor, blend mayonnaise, fresh basil leaves, garlic clove, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste.
Assemble the Dish

Toast the Challah
Lightly toast the challah bread slices in a toaster or on a grill until golden brown.

Serve the Salad
Spread a generous amount of basil mayo on each slice of toasted challah. Top with the chicken salad mixture, and garnish with additional basil if desired.
