Braised Lamb

    Sear the Lamb

    In a large Dutch oven, heat olive oil over medium-high heat. Season lamb shoulder with salt and black pepper. Sear the lamb on all sides until browned, about 5-7 minutes. Remove the lamb and set aside.

    Sauté Vegetables

    In the same pot, add onions, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Liquids

    Add the diced tomatoes, red wine, and broth to the pot. Stir well to combine.

    Combine and Simmer

    Return the lamb to the pot. Add rosemary and thyme sprigs. Bring to a boil, then reduce heat to low. Cover and simmer for about 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork.

    Serve

    Remove the lamb from the pot and let it rest for 10 minutes before slicing. Serve with the braising liquid.

Hummus

    Blend Ingredients

    In a food processor, combine the drained chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and water. Blend until smooth.

    Adjust Consistency

    If the hummus is too thick, add more water, one tablespoon at a time, until desired consistency is reached.

    Garnish

    Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika before serving.

Hazelnut Dukkah

    Toast Nuts and Seeds

    In a dry skillet over medium heat, toast hazelnuts, coriander seeds, cumin seeds, and sesame seeds until fragrant, about 5-7 minutes. Allow to cool.

    Grind Ingredients

    In a food processor, pulse the toasted ingredients along with salt until they are coarsely ground. Do not over-process; you want some texture.

    Serve

    Transfer the dukkah to a bowl and serve alongside the braised lamb and hummus.

Pita

    Warm Pita

    Warm the pita bread in a dry skillet over medium heat for about 2 minutes on each side until soft and pliable.

    Serve

    Cut the pita into wedges and serve alongside the braised lamb, hummus, and hazelnut dukkah.
