Preparation

    Prepare the Black Beans

    Rinse and drain the canned black beans. In a medium saucepan, heat the black beans over medium heat until warmed through. Mash slightly with a fork for a creamier texture, if desired. Season with salt and pepper to taste. Set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon from the skillet and let drain on paper towels. Once cooled, chop into small pieces.

    Prepare the Pickled Red Onion

    If using store-bought pickled red onion, skip this step. To make homemade pickled onions, thinly slice 1 red onion and place in a jar. In a small saucepan, combine 1 cup vinegar (white or apple cider), 1 cup water, and 1 tablespoon sugar. Bring to a boil, pour over the onions, and let sit for at least 30 minutes.

    Prepare the Lettuce

    Wash and dry the lettuce leaves thoroughly. Set aside.

Assembly

    Assemble the Dish

    In a serving bowl or plate, start with a layer of black beans as the base. Add a generous scoop of pimento cheese on top of the beans. Sprinkle the chopped bacon over the cheese, followed by a layer of pickled red onions. Place lettuce leaves around the dish, and drizzle the B&B aioli over everything.
