Method

For the Risotto

  1. 1

    Prepare the Broth

In a saucepan, heat the chicken or vegetable broth over low heat and keep it warm.

  2. 2

    Sauté the Aromatics

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

  3. 3

    Cook the Rice

Add the Arborio rice to the skillet and stir for 2 minutes until the rice is lightly toasted. Begin adding the warm broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

  4. 4

    Finish the Risotto

Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese, salt, and black pepper. Allow to cool before proceeding to form the arancini.

Forming the Arancini

  1. 5

    Prepare the Filling

Once the risotto is cool, take a small amount of risotto in your hand, flatten it out, and place a cube of mozzarella cheese in the center. Shape the risotto around the cheese to form a ball. Repeat until all risotto is used.

Coating and Frying

  1. 6

    Prepare the Coating Stations

Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

  2. 7

    Coat the Arancini

Roll each risotto ball in the flour, dip it in the beaten eggs, and then roll it in the breadcrumbs until fully coated.

  3. 8

    Heat the Oil

In a deep saucepan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 9

    Fry the Arancini

Carefully add the coated risotto balls to the hot oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.

For the Marinara Sauce

  1. 10

    Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the crushed tomatoes, oregano, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally.

  2. 11

    Finish the Sauce

Stir in the chopped basil right before serving.
