Vegetable Biryani Recipe

Preparation

    Rinse the Rice

    Rinse the basmati rice under cold running water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Chop the Vegetables

    Chop the carrots, green beans, bell pepper, and cut the cauliflower into florets. Keep all the vegetables aside.

Cooking

    Sauté Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent. Add the minced garlic and grated ginger, cooking until fragrant.

    Add Spices

    Stir in the cumin seeds, coriander powder, turmeric powder, and garam masala. Cook for another minute to release the spices' aroma.

    Cook Vegetables

    Add the chopped vegetables (carrots, green peas, green beans, cauliflower, and bell pepper) to the pot. Stir well and cook for about 5-7 minutes until the vegetables are slightly tender.

    Add Rice and Water

    Add the soaked and drained rice to the pot. Pour in the water, and add salt and black pepper to taste. Bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.

    Finish the Dish

    Remove from heat, fluff the biryani with a fork, and stir in the chopped cilantro and lemon juice. Let it rest for a few minutes before serving.
