Preparation

Preparing the Rice

1. Rinse the Sushi Rice

In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

2. Cook the Sushi Rice

In a rice cooker or pot, combine the rinsed sushi rice with 2 1/2 cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes until the rice is tender.

3. Season the Rice

Once cooked, transfer the rice to a bowl and gently fold in soy sauce, mirin, and sesame oil. Allow to cool slightly.

Preparing the Spam

4. Slice the Spam

Open the can of Spam and remove it. Slice the Spam into 8 equal rectangular pieces.

5. Cook the Spam

In a skillet over medium heat, cook the Spam slices for about 2-3 minutes on each side or until golden brown and crispy.

Assembling the Musubi

6. Prepare Nori Sheets

Lay a sheet of nori shiny side down on a clean surface or bamboo mat.

7. Layer Rice and Spam

Wet your hands to prevent sticking and take about 1/2 cup of sushi rice. Press it onto the center of the nori, forming a rectangle. Place a slice of cooked Spam on top of the rice.

8. Fold the Nori

Fold the bottom edge of the nori over the rice and Spam, then fold the sides in, and roll tightly to form a compact musubi. Use a little water to seal the edge.

9. Repeat

Repeat the process with the remaining ingredients until all rice and Spam is used.

Serving

10. Slice and Serve

Once assembled, slice the Spam musubi in half or into bite-sized pieces. Optionally, sprinkle with furikake, and serve with pickled ginger and chopped green onions on the side.
