Method
Marinade Preparation
- 1
Combine the Marinade
In a large mixing bowl, combine the lemon juice, soy sauce, brown sugar, minced garlic, and ground black pepper. Stir well until the sugar dissolves.
- 2
Marinate the Pork
Add the pork loin and pork belly to the marinade. Ensure the meat is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Grilling
- 3
Prepare the Grill
Preheat your grill to medium-high heat. If using charcoal, allow the coals to become white hot.
- 4
Grill the Pork
Remove the pork from the marinade, allowing excess marinade to drip off. Grill the pork for about 6-8 minutes on each side, or until cooked through and you achieve a nice char.
- 5
Rest the Meat
Once done, remove the pork from the grill and let it rest for about 5 minutes before slicing.
Salad Preparation
- 6
Prepare the Salad
In a bowl, combine diced cucumber, sliced chili peppers, and diced tomatoes. Season with salt and pepper.
- 7
Dress the Salad
Drizzle olive oil over the salad and toss gently to combine.
Serving
- 8
Serve the Dish
Slice the grilled pork into thin strips. Serve it on a plate alongside the cucumber, chili pepper, and tomato salad. Enjoy your Inihaw!
