Pork Preparation

Season the Pork
In a bowl, mix salt, black pepper, garlic powder, and onion powder. Rub this spice mixture all over the pork loin and pork chops.

Sear the Pork
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned pork loin and chops to the skillet and sear them for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the pork from the skillet and set aside.

Make the Roux
Sprinkle the all-purpose flour over the sautéed mushrooms and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Add the Broth
Gradually whisk in the beef broth, ensuring there are no lumps from the flour. Stir in the soy sauce and Worcestershire sauce. Bring the mixture to a simmer.

Season the Gravy
Season the gravy with additional salt and black pepper to taste. Let it simmer for about 5-7 minutes until it thickens.

Combine with Pork
Return the seared pork loin and chops to the skillet, spooning the gravy over the meat. Allow it to heat through for an additional 2 minutes.
