Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the oil and mix until the mixture resembles breadcrumbs.

Knead the Dough
Gradually add water, kneading the mixture until a smooth and firm dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Combine Ingredients
Add ginger paste, coriander powder, garam masala, red chili powder, and salt to the sautéed onions. Cook for 2-3 minutes.

Roll the Dough
Divide the dough into equal-sized balls. Roll each ball into a thin oval shape about 6 inches long.

Form the Samosa
Cut the rolled dough down the center. Take one half, shape it into a cone, and seal the edge with a little water. Fill the cone with the prepared filling and seal the top by pressing the edges together.

Heat the Oil
In a deep frying pan, heat oil for frying over medium heat until hot.

Fry the Samosas
Carefully slide the filled samosas into the hot oil, frying in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
