Prepare the Rice Noodles
Soak the rice noodles in hot water for about 20-30 minutes until they are soft. Drain and set aside.

Make the Sauce
In a small bowl, mix together soy sauce, tamarind paste, brown sugar, lime juice, and Sriracha until well combined.

Stir-Fry the Ingredients
In the same pan used for the tofu, add another tablespoon of oil. Add the soaked rice noodles and stir-fry for 2-3 minutes. Then, add the tofu, bean sprouts, and green onions, stirring continuously.

Add the Sauce
Pour the prepared sauce over the stir-fried ingredients and toss everything together until well coated. Cook for an additional 2-3 minutes until everything is heated through.

Serve
Transfer the Pad Thai to serving plates and top with chopped peanuts. Serve with lime wedges on the side.
